Enchiladas

Ingredients

  • 500g Chicken Fillets, thinly sliced
  • 1 onion, finely chopped
  • 150g grated mozzarella or tasty cheese
  • 8 Tortillas
  • Passata
  • Spices

Method

  1. Preheat the oven to 180C(160 Fan, gas mark 4)
  2. Combine passata and hot water
  3. Heat a little oil in a large frying pan
  4. Cook the onion for 2 minutes
  5. Add chicken and cook for 5 minutes or until golden brown
  6. Add half of the passata, simmer for 3 minutes
  7. Remove from the heat and stir in half the cheese
  8. Heat the tortillas for 35 seconds in a microwave
  9. Place a large spoonful of chicken mixture onto the centre of each tortilla
  10. Roll and place in a greased ovenproof dish
  11. Spoon over the remaining passata and cheese
  12. Bake for 10 minutes, or until golden brown
