Fruit Scones

Ingredients

  • 225g Self Raising flour
  • 1tsp Baking powder
  • 55g margarine
  • 55g sugar
  • 55g raisins (soaked in orange juice)
  • Milk
  • 1 egg

Method

  1. Rub the margarine into flour and add the baking powder and sugar and make a well in the middle
  2. Drain the raisins, break the egg and pour into the well and mix
  3. Add milk to make a soft dough
  4. Roll out to 2cm thick and cut scones using a 7cm cutter (dab cutter in flour)
  5. Brush the tops of the scones with beaten egg
  6. Bake at 180 Celsius for 10-15 minutes
