Banana Bread
Ingredients
- 285g plain flour
- 1tsp bicarbonate of soda
- 1⁄2 tsp salt
- 110g butter
- 225g sugar
- 2 eggs
- 4 mashed bananas
- 85ml buttermilk (or normal milk mixed with 1.5 tsp lemon juice or vinegar)
1 tsp vanilla extract
Method
Preheat the oven to 180C
Sift the flour, bicarbonate of soda and salt into a medium mixing bowl
In a large bowl, cream the butter and sugar together until light and fluffy
Add the eggs, mashed bananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture
Grease a large tin and pour the mixture in
Bake for 45 mins, or until well-risen and golden brown
