Banana Bread

Ingredients

  • 285g plain flour
  • 1tsp bicarbonate of soda
  • 12 tsp salt
  • 110g butter
  • 225g sugar
  • 2 eggs
  • 4 mashed bananas
  • 85ml buttermilk (or normal milk mixed with 1.5 tsp lemon juice or vinegar)
  • 1 tsp vanilla extract

    Method

  • Preheat the oven to 180C

  • Sift the flour, bicarbonate of soda and salt into a medium mixing bowl

  • In a large bowl, cream the butter and sugar together until light and fluffy

  • Add the eggs, mashed bananas, buttermilk and vanilla extract to the butter and sugar mixture and mix well. Fold in the flour mixture

  • Grease a large tin and pour the mixture in

  • Bake for 45 mins, or until well-risen and golden brown
